If you read or saved or printed or whatever the enchilada recipes I posted earlier, you'll want to check this update.
Okay, first of all, you'll need a 13x9x2 inch pan. Second, if you use basic corn tortillas, you'll get about 14 of them in the pan and use about 1/2 to 3/4 of the meat, depending on how much you stuff and/or pack them. Same for 6-7 inch flour tortillas.
Good thing, if you freeze the meat, you can do it all again in 2-3 months!
